En Champagne, l’historiographie a identifié très précocement les « vins de Rivière », ceux de la vallée de la Marne, et les « vins de Montagne » [de Reims], arguant que leur différenciation se jouait sur une différence organoleptique et donc de la qualité : ces vins auraient donc reçu leur appellation de leur typicité. Or, dans les archives du chapitre cathédral rémois, un ensemble documentaire du début du xiiie siècle voit apparaître précocement le nom des « vins de Montagne », sans les opposer aux vins de Rivière. L’identification d’une région du vin s’y lit dans les conflits d’acteurs qui souhaitaient y contrôler, au moins en partie, les circuits d’approvisionnement du vin. L’identité d’une région viticole se développait à mesure que les parties juridiques déployaient sur cet espace l’ensemble des droits qu’elles convoitaient.
