      <title>A viticultura e a agroindústria de suco de uvas         americanas em um mercado em crescimento</title>

      <description>No Brasil, a produção e o consumo de suco de uva vem crescendo nos         últimos anos, sendo realizada com o uso de uma matriz diversificada de         cultivares de uvas do tipo americano. Esta base inclui variedades         tradicionais e suas mutações precoces, além de novas cultivares         brasileiras, criadas para contribuir para a solução de demandas do         segmento de sucos de uva. A viticultura brasileira voltada para a         produção de sucos é praticada em diferentes sistemas de cultivo e         condições ambientais, que abrangem regiões de clima temperado, onde a         uva é produzida sob o sistema tradicional, até regiões de clima         subtropical e tropical, onde inovações no sistema de produção permitem         a realização de duas ou mais colheitas anuais. A tecnologia de         extração de sucos é baseada na sulfitagem ou aquecimento. Diferentes         aparatos tecnológicos e procedimentos vem sendo desenvolvidos visando         contribuir para solução de demandas do segmento. O suquificador         integral possibilita a produção de suco de uva em pequena escala sem         adição de água, que pode então ser classificado como “suco integral”,         atendendo a legislação brasileira. Como resultado deste aporte de         tecnologias, os sucos de uva tintos brasileiros apresentam cor         violácea intensa e brilhante e aroma frutado característico bem ao         gosto de consumidor brasileiro. In Brazil, the production and consumption of grape juice have been         growing in recent years, and it has been carried out with the use of a         diversified matrix of grape varieties of the American type. This base         includes traditional varieties and their early mutation, as well as         new Brazilian cultivars, created to contribute to the solution of the         demands of the grape juice segment. Brazilian viticulture focused on         juice production is practiced in different farming systems and         environmental conditions, which cover temperate regions, where grapes         are produced under the traditional system, to areas of subtropical and         tropical climate, where innovations in the production system allow         having two or more annual harvests. Juice extraction technology is         based on sulphation or heating. Different technological devices and         procedures have been developed aiming to contribute to the solution of         the segment's demands. The integral extractor allows the production of         small-scale grape juice without adding water, which can then be         classified as &quot;integral juice&quot;, in compliance with Brazilian         legislation. As a result of this technology, Brazilian red grape         juices show intense violet color and fruity aroma, characteristic of         Brazilian consumers. </description>

      <title>La viticulture et l’agro-industrie du jus de raisin américain dans un marché en expansion</title>

      <description>Au Brésil, la production et la consommation de jus de raisin ont augmenté ces dernières années en utilisant un ensemble diversifié de cépages de type américain. Cet ensemble comprend des variétés traditionnelles et leurs mutations précoces, ainsi que de nouveaux cultivars brésiliens, créés pour contribuer aux nouvelles demandes du secteur du jus de raisin. La viticulture brésilienne axée sur la production de jus est pratiquée avec différents systèmes de culture et de conditions environnementales, allant des régions tempérées, où les raisins sont produits selon le système traditionnel, aux régions subtropicales et tropicales, où les innovations dans le système de production permettent deux récoltes annuelles ou plus. La technologie d’extraction du jus est basée sur le sulfitage ou le chauffage. Différents appareils et procédures technologiques ont été développés pour contribuer aux demandes du secteur. Le suquificador, appareil intégralement brésilien, permet la production de jus de raisin à petite échelle sans ajout d’eau, qui peut alors être classé comme « jus intégral », conformément à la législation brésilienne. Grâce à cette technologie, les jus de raisins rouges brésiliens ont une couleur violacée intense et brillante et un arôme fruité caractéristique qui convient bien au goût des consommateurs du pays.
