http://preo.ube.fr/territoiresduvin/index.php?id=792 De nos jours, certains vignerons italiens développent de nouveaux principes œnologiques liés à l’usage, bien connu dans l’Antiquité, de contenants céramiques, afin de créer des vins originaux, entre autres affranchis du boisé de l’élevage en tonneaux.Après un retour sur les sources anciennes littéraires et archéologiques, nous proposons donc de dresser ici un panorama non exhaustif des vins italiens produits ou vieillis en jarres, selon des méthodes de vinifications différentes. Ces vins sont le reflet du talent de chaque vigneron et de leur terroir, du Frioul au Trentin-Haut-Adige, de la Toscane à l’Île de Pantelleria. A certain number of Italian winemakers are developing new oenological theories through the use of ceramic recipients - very common in Antiquity - to create original wines, freed from various characteristics, notably the woody element found in oak barrels.After a return to the literary and archaeological sources, we are now able to provide a non-exhaustive panorama of the Italian wines produced or aged in earthenware, according to different wine-making methods. These wines reflect the talent of each wine-maker and their region, from the Frioul to Trentin-Haut-Adige, from Tuscany to Pantelleria Island.
